Vindaloo Sauce with Pork Belly

INGREDIENTS:

1 tbsp oil
1 medium onion, diced (Optional)
1 lb pork belly, cubed
1 jar Truly Indian Vindaloo Cooking Sauce

INSTRUCTIONS:

Heat 1-2 tablespoons of oil in a pan. Add onion and cubed pork belly and stir-fry until lightly browned. Add 13 oz. of sauce from the jar. Cover and simmer for 15 minutes, stirring occasionally. Add water if the sauce is too thick. Garnish with red pepper and microgreens. Serve with naan bread.

For a vegetarian dish use Cottage Cheese, Tofu or Vegetables.
