Madras Curry Sauce with Cauliflower

INGREDIENTS

1 head of cauliflower, cut into bite-sized piecesĀ 
2 tbsp oil, divided
1 jar (369gm/13Oz) Truly Indian Madras Curry Cooking Sauce
Fresh coriander, chopped (garnish)

INSTRUCTIONS:

Boil large pot of water and par-cook cauliflower in boiling water for 1 minute to soften. 

Heat 1-2 tablespoons of oil in a pan and add cauliflower. Stir-fry until lightly browned. Add 13 oz. of sauce from the jar. Cover and simmer for 15 minutes, stirring occasionally. Add water if the sauce is too thick, until cauliflower is cooked. Garnish with coriander. Serve with rice. For a vegetarian dish, use cottage cheese, tofu, or vegetables.
